Nestled among the enchanting hills between the medieval town of Montepulciano and the Renaissance gem of Pienza, Caseificio Cugusi lies in one of Tuscany’s most picturesque and celebrated landscapes.

Surrounded by history, art, and nature, the dairy spans around 190 hectares of olive groves, vineyards, and open pastures. These pastures — home to a flock of about one thousand sheep — are renowned for the quality of their grasses, which give the milk, and therefore the Pecorino, its distinctive, delicate flavour and authentic character.

Since its founding, Caseificio Cugusi has remained faithful to artisanal methods and local traditions. Even today, milk from its own flock and from a few selected farms in Pienza and the Val d’Orcia is transformed into a wide variety of Pecorino cheeses. From milking to maturation, every stage of production is carried out with care and dedication — whether it’s for the fresh cheeses or the aged ones, matured under walnut leaves, bran, hay, or ash, following the most authentic Tuscan tradition.
