DESCRIPTION

Description: Amaro Amiata is an Italian amaro liqueur made up of five types of herbs, three of which are local and two of Asian origin. The red color comes from Karkadè (Hibiscus sabdariffa), which also contributes to the tone of pleasantness – the distinctive feature of this product. The second Asian herb used is the rhubarb rhizome (Rheum palmatum), which contributes to the evident retro-olfactory intensity.

How to use: Amaro Amiata has a good intensity of aroma and is also suitable for being served cold; or, uniquely among herbal macerates, to be paired with desserts.

Alcohol: 30% vol.

Size: 0.7 L

Collettivo Botanico creates artisanal herbal liqueurs on Mount Amiata, drawing on rare and endemic botanicals unique to this volcanic landscape. Crafted in small batches through careful research, cold maceration, and seasonal sourcing, each bottle captures the purity, biodiversity, and authentic character of its territory.

Amaro Amiata – A Botanical Expression of Place

Amaro Amiata is not simply an amaro; it is an interpretation of landscape, balance, and botanical precision. Born on the slopes of Mount Amiata, this amaro liqueur reflects a territory shaped by volcanic soils, mineral richness, and a unique coexistence of Mediterranean and continental influences. In a category often dominated by overpowering sweetness or aggressive bitterness, Amaro Amiata stands apart for its composure: a decisive bitter backbone softened by a subtle, natural sweetness that makes each sip layered, elegant, and deeply satisfying. Crafted by Collettivo Botanico, Amaro Amiata represents a contemporary approach to tradition – one that respects the heritage of Italian herbal liqueurs while rethinking how bitterness, aroma, and drinkability can coexist. The result is an amaro with character and clarity, designed not to overwhelm the palate, but to engage it thoughtfully, lingering with finesse long after the final sip.

A Carefully Balanced Botanical Formula

At the heart of Amaro Amiata lies a precise and intentional botanical composition. The recipe is built around five herbs, selected for their aromatic integrity and their ability to interact harmoniously rather than compete. Three of these botanicals are rooted in the local ecosystem surrounding Mount Amiata, while two originate from Asia – chosen not for exoticism, but for their functional and sensory contribution to the final balance. The most visually striking element of Amaro Amiata is its deep red hue, derived naturally from Karkadè (Hibiscus sabdariffa). Beyond colour, hibiscus plays a central sensory role: it introduces a gentle acidity and a rounded pleasantness that softens the bitterness and enhances drinkability. This note is fundamental to the amaro liqueur’s identity, giving it a distinctive freshness and an unexpectedly smooth progression on the palate. Complementing this is rhubarb rhizome (Rheum palmatum), an Asian botanical long valued in traditional herbal preparations. In Amaro Amiata, rhubarb contributes depth and retro-olfactory intensity, adding a dry, earthy tension that anchors the aromatic profile. The interaction between hibiscus and rhubarb creates a dynamic contrast – bright yet grounded, vibrant yet restrained – which defines the amaro’s unmistakable character.

Bitterness with Precision, Sweetness with Restraint

What distinguishes Amaro Amiata most clearly is its approach to bitterness. Rather than aiming for immediate impact, the bitterness here unfolds gradually, revealing itself in layers. It is assertive but never aggressive, structured but not sharp. The restrained sweetness – deliberately measured – serves not to mask the bitterness, but to frame it, making the overall experience balanced and remarkably pleasurable. This philosophy reflects Collettivo Botanico’s broader vision: fewer masks, more substance. Each element is allowed to remain recognisable, contributing to a flavour profile that feels honest, transparent, and intentionally composed. The result is an amaro liqueur that rewards slow tasting, inviting the drinker to notice how aromas evolve and how the finish lingers with quiet confidence.

How to Enjoy Amaro Amiata

Amaro Amiata is remarkably versatile in service, offering possibilities that extend beyond the traditional end-of-meal ritual. Thanks to its aromatic clarity and balanced structure, it can be enjoyed neat at room temperature, allowing its full botanical expression to emerge gradually. For a more refreshing experience, it also performs beautifully served cold, where its bitterness becomes sharper and its floral notes more pronounced. Uniquely among herbal macerates, Amaro Amiata lends itself exceptionally well to pairing with desserts. Its controlled sweetness and hibiscus-driven freshness make it an elegant companion to dark chocolate, cocoa-based desserts, dried fruit tarts, or nut-forward pastries. Rather than competing with sweetness, it complements it, cleansing the palate while adding aromatic depth. For those inclined toward mixology, Amaro Amiata can also be explored as a contemplative component in minimalist cocktails, where its identity remains intact without requiring embellishment.

An Amaro Rooted in Research and Territory

Amaro Amiata is the result of careful study, collaboration, and respect for raw materials. The development of Collettivo Botanico’s products often involves dialogue with agronomists, botanists, and research institutions, ensuring that both local and non-local botanicals are sourced and processed with awareness and responsibility. This approach safeguards not only flavour quality, but also the fragile ecosystems from which these ingredients originate. Produced in small, traceable batches, Amaro Amiata reflects a commitment to craftsmanship over scale. Each bottling captures a moment in time – shaped by the availability of botanicals, the season, and the ongoing refinement of the recipe.

A Contemporary Amaro with a Clear Identity

Amaro Amiata is an invitation to rediscover what an amaro liqueur can be when balance, place, and intention come first. It is neither nostalgic nor experimental for its own sake, but confidently rooted in its landscape and guided by restraint. Elegant, expressive, and quietly complex, it speaks to those who appreciate bitterness not as a challenge, but as a refined pleasure.
