Cinta Senese
Cinta Senese is an ancient breed of pig exclusive to Il Borgo's territory.
Records of its breeding date back as far as the Middle Ages, but it was subsequently abandoned. Centuries later, the outstanding virtues of the breed, characterised by very compact muscle mass (thanks to the fact that it is farmed in a semi-wild state), were rediscovered.
The meat of Cinta Senese pigs is PDO certified: each animal undergoes strict controls and, in compliance with regulations, each farm must have a specific amount of woodland area per pig.
The animals' diet consists mainly of tubers, acorns and forest products and is only partially supplemented with selected feed. Consequently, even the fat of the Cinta Senese has beneficial organoleptic qualities, scientifically recognised by dedicated studies.
Il Borgo processes these fine meats, producing prosciuttos and charcuterie of the highest quality, with unique and surprising flavours.
