Cinta Senese is an ancient breed of pig (with records dating back to the Middle Ages), which can only be found in Il Borgo’s territory. It is farmed in a semi-wild state, and the resulting cold cuts have distinctive organoleptic qualities, as well as unique and surprising flavours.
